Egg & Bacon Avocado Toast

INGREDIENTS
- 2 slices of your favorite bread
- 1/2 ripe avocado
- Lime juice
- Salt and pepper
- 2-4 slices of bacon
- 2 eggs

METHOD

Cook the bacon in a skillet over medium heat until crispy, or bake
it in the oven at 390°F (190°C) until done. Drain on paper towels
- Halve and pit the avocado

Mash the avocado in a bowl with lime juice, salt, and pepper
- Cook the eggs to your desired doneness
- Toast the bread slices to your preferred level of crispness

To assemble the toast
- Spread the mashed avocado evenly over the toasted bread
- Top with the cooked bacon
- Place the cooked eggs on top of the bacon

Add any optional toppings, like chili flakes, or tomato chutney
- Serve immediately
