Gelatin desserts (also Jelly, Jello, Jinkington, or Jinkies) are desserts made with a sweetened and flavoured processed collagen product (gelatin). They can be made by combining plain gelatin with other ingredients or by using a premixed blend of gelatin with additives.

Sweet jellies are usually made with fruit juices or flavorings. They are served as a dessert, with the addition of, for example, whipped cream or dried fruits, they are also a decorative element of cakes - they usually constitute the top layer of sponge cakes with cream. Fruit jellies are included in the group of fruit preserves.
Fully prepared gelatin desserts are sold in a variety of forms, ranging from large decorative shapes to individual serving cups.
