This is me and Karen. On June 21st 2022, she is
turning 40! In order to celebrate this august event, I will prepare a
delicious dinner of some of her favorite things. Karen loves pizza and,
fortuitously, I am Italian and know how to make pizza from scratch. I will
make a couple of personal pies for us to share: a traditional margherita
pizza and a fusion pizza topped with sauteed onions, parmigiano, Chinese
broccoli, king oyster mushrooms (thank you for introducing me to this
incredible fungus, Karen's mom!) and mozzarella. Check them out!
Karen also loves taro. It reminds her of her childhood and is something
widely eaten in Taiwan, where Karen's parents' are from. Some months ago
she was reminiscing about this delicious root vegetable and how she
associates it with comfort food and home. Taro has bright white flesh
peppered with purple flecks.
I have never eaten taro, other than in bubble tea, but I had a crazy idea.
Taro is similar to potato. Karen loves pasta. I decided to innovate a new
dish just for her birthday - taro gnocchi. Not many others have thought of
taro gnocchi so it feels pretty special but I was at least able to find
one recipe as a guide for my experiment.
