Homemade bread is fluffy, tender, and way better than store-bought loaves. Gluten-free bread is bread that does not contain any gluten. Gluten is a type of protein found in some grains such as wheat, rye, and barley. This protein is responsible for binding bread, retaining its moisture, and providing a soft texture. Bread and other baked goods typically use flour from grains such as wheat.

I’ve been working on a reliable gluten free bread recipe for years now – and it’s finally at a stage where it tastes, smells, looks and feels like regular, wheat-based bread. It isn’t designed to satisfy your nutritional needs for the day, though! I really prefer to do some things very well (a great-tasting, beautiful loaf of bread) rather than try to do everything and do most of it poorly.
