Serra da Estrela cheese is one of the best varieties of Portuguese - and the oldest known. Perhaps this cheese can be called the same age as Portugal itself. For its production in the Serra da Estrela mountains, the milk of elite breeds of sheep is used. Real "estrel" cheese is not a lot. This is where its uniqueness lies: the lack of mass production, the limited region and, of course, incredible taste.
