Parmesan, also known as Parmigiano-Reggiano, is an Italian hard, granular cheese produced from cow's milk and aged at least 12 months. In addition to excellent taste characteristics, it also has other important qualities. Despite its high caloric content, it is easily absorbed by the body, so doctors recommend it to people with indigestion, children and people over 50 years.
