Ok, so they ain't pretty, and they don't smell particularly good - it's
green mush basically! Traditionally, mushy peas are dried marrowfat
peas, soaked in salt overnight before being rinsed and then boiled in
water until soft. The mush is then seasoned with salt and pepper and is
perfection. But further magic can be added; vinegar, mustard, paprika,
mint, stock, sugar. Your typical British chippy will most likely keep it
simple - salt, pepper and gallons of butter! (** and dairy free is just
as good)!
