Efo riro is a vegetable soup native to the Yoruba people of
western Nigeria. The two vegetables most commonly used to prepare the soup
are Celosia argentea and Amaranthus hybridus. Efo means ”Green leafy
vegetable” or ”spinach”, and riro, means ”to stir”. So basically, Efo riro
simply means ”stirred leafy vegetable”. This savory dish can be eaten with rice or a staple
