Mochi Ice Cream are Japanese rice cakes with an ice cream center in a soft, slightly chewy, sweet rice dough. The ice cream flavors the confection while the mochi adds sweetness and texture.

Mochi Ice Cream

During the Japanese New Year, there is a tradition called Mochitsuki, which is the more laborious process of steaming the sweet glutinous rice and then pounding it to make mochi (small glutinous rice cakes).
