Dulce de leche is a confection from Latin
America prepared by slowly heating sugar and milk over a period of several
hours. The resulting delicacy, which takes on a spreadable, sauce-like
consistency, derives its rich flavour and colour. So, it is basically
caramelized milk or milk jam typically on its own, but also used to top or
fill other sweet foods.
Typically made with cows' milk,
Dulce de Leche is Spanish for "sweet [made]
of milk". In France it is called confiture de lait, in Polish and
Turkish culture it is called kajmak/kaymak, and a similar cousin
made out of goat's milk in Mexico is called cajeta.
