Quesabirria Tacos

Quesabirria tacos are traditional Mexican stew tacos originally from Tijuana, Mexico. It is a hybrid creation that takes the Birria stew of Jalisco and pairs it with a delicious quesadilla that is later dunked in the Birria consome (soup). They are a perfect combination of sweet, sour, savoury, meaty goodness with that perfect hint of spiciness.

Birria Stew + Quesadilla = Quesabirria Tacos

The base of these delicious tacos is the traditional ancestral Birria stew made with beef that has been marinated to perfection with a blend of herbs, spices, vegetables and peppers. This cooks for over 5 hours until the meat is deliciously tender. The quesadillas are made from corn flour tortillas with mozzarella or Chihuahua Cheese (not made from actual chihuahuas).

Taqueros (the official name for taco makers) fuse these fantastic dishes by adding the stewed beef to the quesadilla then grilling them until the cheese melts into the meat and the tortilla is golden. They then garnish the taco with chopped onion and cilantro and serve the leftover consome (soup) that comes from making the Birria.
