-endosperm- with 14-20% moisture, which turns to steam as the kernel
is heated. Pressure from the steam builds until the hull ruptures,
allowing the kernel to expand 20-50 times its original volume. It can
be eaten with many toppings, most commonly salt or caramel.

Ingredients
3 tablespoons coconut oil
1/3 cup high quality popcorn kernels
Butter to taste
Salt to taste
Instructions
Heat the Oil in a saucepan on medium high heat
Add the kernels in an even layer
Cover the pan, remove from heat for 30 seconds
Return pan on the heat, gentley shaking as you go
Once the popping slows to several seconds between pops, remove
from heat
