I highly recommend making these cookies with the people you love during the holidays!
Ingredients
2/3 cup of softened (room temperature) unsalted butter
3/4 cup brown sugar
2/3 cup molasses
1 large egg (room temperature)
3 and 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking soda
1 tablespoon ground ginger
1 tablespoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
optional: royal icing, and other cookie decorations
Directions
Using a stand or hand mixer, beat the butter for one minute on medium speed until it is smooth.
Add brown sugar and molasses, and beat on medium-high speed until it is creamy.
Add the egg and vanilla, and beat on high speed for two minutes.
In a different bowl, mix the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves.
On low speed, slowly mix in the dry ingredients into the wet mixture on low speed until combined.
Divide dough in half, and wrap each half with plastic wrap tightly. Chill for at least three hours.
Preheat oven to 350° fahrenheit.
Generously flour your work surface and rolling pin, and roll out your cookie dough until 1/4-inch thick. Cut your dough into shapes using cookie cutters.
