Hummus is a Middle Eastern dip, spread, or savory dish made from cooked, mashed chickpeas blended with tahini, lemon juice, and garlic. The standard garnish in the Middle East includes olive oil, a few whole chickpeas, parsley, and paprika. In Middle Eastern cuisine, it is usually eaten as a dip, with pita bread.

How to make hummus:

  1. Add all of the ingredients, except for the water, to a food processor and blend on high, stopping occasionally to scrape the sides. Continue until a smooth consistency is achieved. The longer it's left to blend, the smoother it becomes.
  2. While the mixture is blending, in a thin and steady stream, add the cold water to the food processor. The colder the water is, the better. We often add an ice cube to ours to chill it, although this is not necessary. Adding the water in this way while the mixture blends helps to aerate the hummus and make it more 'fluffy'. If desired, though, the water can simply be added with the ingredients in step #1, and this step can be skipped.
  3. Taste test the hummus. If you’d like the consistency to be creamier, add more olive oil and/or tahini. If you’d like more zest, add more lemon juice.
  4. Plate, garnish, and serve!
