Matcha a is finely ground powder of specially grown and processed green tea leaves, traditionally consumed in East Asia. The green tea plants used for matcha are shade-grown for three to four weeks before harvest; the stems and veins are removed during processing. During shaded growth, the plant Camellia sinensis produces more theanine and caffeine. Descriptions of the taste of matcha range from grassy, earthy, and vegetal to savory, nutty, and toasted to creamy, buttery, and sweet. Really good matcha can even be described as umami. You might ask yourself “well which is it? How can it be both grassy, sweet, and umami?” The answer is, it depends. Like other flavors, it depends on you and how you perceive them..
