...that cumin is not a common (I'm trying for a bad
pun here...) spice in Mexican cuisine? Cumin does get used in preparing
tacos al pastor, however. This is because tacos al pastor were created
by Lebanese people who immigrated to Mexico and brought their flavour
profile, which does include cumin, to this classic Mexican
dish.
Although traditionally made with pork, above is a photo of a
plant-based version of tacos al pastor I make, which I call
"A La Pastorita". They are made with jackfruit, seasoned with
spices typically associated with Middle Eastern or Mediterranean
cuisine, including cumin, oregano, basil, and cinnomon. I topped these
ones with pineapple and jalepenos which maintains something resembling
tacos al pastor.
