Mozzarella cheese to make fresh mozzarella, the best and only acceptable kind in my book, is made by first, incubating the milk in whey starter. Then rennet is added to form the curds. Then they are put in hot water with some whey until they start to form cheese strings and then stretched/kneaded and formed into balls and viola! They are done! It is really easy to make, all you need is rennet, citric acid, milk, and water. So if you're bored in lockdown why not try to make it.
