1 cup Pasta (Penne, Conchiglie or Farfalle work well)
10 - 15 Cherry Tomatoes
3 Tbls Olive Oil
3 Tbls White Vinegar
1/4 Medium Red or White Onion
1/4 Tsp Black Pepper
1 Tsp Lemon Juice
1/2 Sweet Pepper
Feta Cheese to preference
Preparation:
Boil pasta as directed on packaging. Rinse with cold water and set
aside.
Wash Kale well and massage to unstiffen.
Add the olive oil, white vinegar, black pepper, lemon juice and
chopped onions to a glass and mix well. You may adjust ingredients to
taste. Set aside until ready to eat.
Cut the Cherry tomatoes in halves and sweet pepper in large cubes.
Time to Assemble!
In a large container add the kale, sweet peppers, cherry tomatoes,
feta cheese and boiled pasta. Once ready to eat pour in the
dressing, mix well and serve immediately.
