Ube Ice Cream Recipe

Dioscorea alata, also known as purple yam, ube (/ ʊ b ɛ /), or greater yam, among many other names, is a species of yam (a tuber).The tubers are usually a vivid violet-purple to bright lavender in color (hence the common name), but some range in color from cream to plain white.

The earliest recorded use of ube in ice cream was in a recipe from 1922, when ice cream's introduction to Filipino culture during the American occupation (as the local adaptation sorbetes) led to new flavors such as mango, pinipig and melon. The recipe called for mashed ube, milk, sugar and crushed.

  1. Measure 1 cup Ube Halaya and place it on desired container, preferably with a plastic cover.
  2. Add in ½ cup sweetened condensed milk, 2 packs (250mchilled nestle cream, a pinch of salt.
  3. Mix the ube mixture with an electric mixer until smooth and incorporated.
  4. Add violet food color gel little by little and mix until well blended, you can add more coloring to achieve your desired hue.
  5. Test the taste of your ube mixture. Whisk again until well blended.
  6. You can do it manually with a whisk if you want, but I find it easy to use a hand mixer.
  7. Cover with a plastic or anything and freeze until partially set about an hour or less.
  8. Take off from the freezer and mix it again with the electric mixer until smooth, cover and freeze for another hour.
  9. Freeze for 6 hours to overnight or until it is ready to be served.
  10. Enjoy by serving in a dessert glass.
