Chè Thái is a Vietnamese dessert that was inspired by a Thai dessert Tub Tim Krop. Another way to call this dessert is Vietnamese Fruit Cocktail. The sweet dish contained coconut milk , many different tropical fruits, jellies, and red rubies.
These red rubies are made from water chestnuts coated with red coloring and tapioca starch. Once cook the tapioca starch covering the chestnut turned translucent, and the chestnuts looked shinny. Hence it's nickname red rubies.
The fruits used in this cocktail are fresh tropical fruit; however, not
everyone will have access to fresh tropical fruit. Canned tropical
fruits are another alternative to make this dessert.
Canned
tropical fruits like lychee,
jackfruit,
rambutan,
longan,
coconut meat, and
durian. These fruits go well together;
however, not many people like the smell of durian. So everyone is
welcome not to add that fruit to the cocktail.
The jellies added are either coconut jelly that can be bought at an Asian grocery store or homemade jelly. This dessert and like an abstract artwork, the more color it has, the more beautiful and picturesque the cocktail is going to become.
The ingredient for this cocktail is very straightforward, and it is almost impossible for anyone to fail or make a mistake. The only problem is having access to an Asian market and finding canned tropical fruits. Now, let try making it!
