2 medium-sized apples, peeland and cut into bitsized pieces
2 TBSP vegan butter
1- 1/2 TBSP brown sugar
1/2 tsp cinnamon
For The Toppings:
2 TBSP vegan butter
2 TBSP brown sugar
1-1/2 TB maple syrup or agave
1 tsp vanilla
1/2 tsp cinnamon 3/4 gluten- free oats
pinch of salt
1 cup of almonds or walnuts (optional)
Directions:
1. For the Apple Filling:
Add butter, brown sugar, and cinnamon to a skillet on medium heat and stir
until melted and bubbly. Add apples then turn heat to low and saute for 2
minutes. Cover skillet with a lid until for approximately 3-5 minutes
until apples are soft and tender, stirring occasionally. Remove from heat
and place on a plate or bowl.
2. For the Topping:
In the same skillet, add the butter, brown sugar, maple syrup, cinnamon,
vanilla, and salt over medium heat and stir until melted and bubbling. Add
oats (and almonds/ walnuts if using) then cook, stirring often until
mixture is very frangrant and slighly toasted, about 4-5 minutes. Remove
from heat and let cool.

Scoop apples into bowls and top with crisp topping. Serve with dairy-free
ice cream or coconut whipped cream if desired.
