One of my favourite cakes is a (my) traditional Jamaican Rum Cake. A smooth, delicate sponge, a touch of
pudding, baked
then soaked and glazed with a modestly sweetened rum sauce. Yummy and yes, leaves you feeling a little
bit RUMbunctious!

Traditional Jamaican Christmas Fruitcake or Christmas Pudding, as it's often called, is believed to have
been brought to
the caribbean by the British from as early as the 18th century. Adapted to the pockets and palate of the
Jamaican
people, ours is a batter loaded with dried fruit, soaked in wine and white rum and then baked or
steamed. This dense,
luscious cake brings a close-your-eyes, deep-breath from a taste of this heart-warming sensation.
