Fridge cake is my go to recipe when I need something quick and yummy to make for any occassion. It's super easy to make and it won't be around for long once you bring it out!
My friends are always asking me to make this for their birthdays so I hope you enjoy it as much as they do.
What you'll need
225g/8oz butter
75g/3oz light soft brown sugar
3 tablespoons golden syrup
5 tablespoons of cocoa powder
325g/12oz digestive biscuits
225g/8oz plain chocolate
You'll also need a baking tray. I recommend a 12x8 baking tray but you can adjust the ingredients based on the size you have. You can find baking trays

Method
Grease and line the baking tray
Melt the butter and sugar and syrup together in a large pan. Once melted sift in the cocoa powder and stir until fully mixed in
Crush 2/3 of the digestives in a bowl with the tip of a rolling pin
I personally prefer the digestives to still be quite chunky so try not to crush them too much or they will get lost in the mixture
Add the digestives to the butter mixture and stir in
At this point you could also add in cherries, marshmellows or dates if you want some extra texture in there
Spread the butter and biscuit mix over the bottom of the baking tray
Use the remaining digestives to create a layer on top of the butter and biscuit mix
Melt the chocolate either in a bowl over boiling water or in the microwave and once melted pour onto the baking tray
Leave in the fridge to set for 1-2 hours at least, or overnight if you have the time
