Frangipane and pear tart
When pears meet almonds, here is the magic!
My passions are food and traveling, or to be more precisely, I love to
try food while traveling: meeting a culture different from yours,
tasting their food and the exciting new combination of ingredients.
That’s why I have made this tart, with some personal adjustments. I
thought that pears and almonds could be a good match, enriched with
orange zest and anisette. Here is my Frangipane and pear tart.
What you need:
For the pastry
- 250gr of flour
- 100 of sugar
- 2 eggs
- 70gr of sunflower oil
- 2 teaspoons of baking powder
- 1 teaspoon of vanilla
For the filling
- 80gr of sugar
- 150ml of any nut milk
- 1 egg
- 1 tablespoon of potato starch
- 150gr of blanched almonds
- The zest of one unwaxed orange
- 1 teaspoon of anisette
Method
- Pour the flour onto a pastry board, make a hole right in a middle like the shape of a Vulcano and add the sugar and yeast over the sides. Now, add the eggs and the vanilla, and, slowly pour the oil while start incorporating the eggs into the mixture The trick is to continue to mix with one hand, while using the other hand to push some of the flour towards the center so that it is gradually absorbed. Knead your dough once firm and then set aside.
- To make your lactose free frangipane cream, place the almonds in the food processor with a tablespoon of sugar and grind until you have a floury mixture. Pour the milk into a small saucepan and heat without bringing it to the boil. In another bowl, mix the eggs and the rest of the sugar until creamy. Now, add the potato starch and the grounded almonds to the egg mixture and mix well. Add the orange zest, anisette and lukewarm milk and stir.

Transfer the resulting mixture to the saucepan and place on the
heat. Cook at low heat, stirring regularly, until the cream
becomes nicely compacted. You are ready to assemble your delicious
tart. I have added the three pears but you can add any fruit you
like. Bake for 40mins at 180C.
