What the hell is a Kimchi pancake?
Kimchi pancake is a savory pancake commonly made with wheat flour, a bit
of seasoning and the most important ingredient -
loads of kimchi! The Korean name for kimchi pancakes is
Kimchi Buchimgae (김치 부침개), but some people might also call it Kimchi
Jeon (김치전). Kimchi pancakes are super easy to make and very
versatile. They are easily adapted with various ingredients such as ground
meat for the meat lovers out there or other vegetables and chili paste
(gochujang) for those who perfer a vegan-friendly option. The
pancakes are occasionally served with a dipping sauce on the side and may
come sprinkled with sesame seeds. They are usually enjoyed as a quick,
filling snack or an appetizer, but they can also be served as a main
course or a side dish.
To make your first Kimchi pancake, please follow the recipe below 👩🏼🍳
Stuff you will need:
1 cup of delicious kimchi
1/4 cup of kimchi juice
1 large egg
3/4 cup all-purpose flour, or as needed
1/2 teaspoon salt
1/2 teaspoon sesame oil
Spoon of brown sugar
1/2 cup thinly sliced green onions
1 tablespoon vegetable oil
Instructions:
Drain kimchi thoroughly through a sieve and reserve the
juice. Chop kimchi finely.
Combine egg, 3 tablespoons kimchi juice, water, brown
sugar, salt, and sesame oil in a large bowl. Whisk together. Add green
onions and kimchi. Stir in flour just until combined.
Heat oil in a skillet over medium-high heat. Add a few
spoonfuls of pancake batter; any size pancake will do.
Cook until edges are lightly browned, about 3 minutes.
Flip and cook until crispy, 2 to 3 minutes more. Transfer pancake to a
serving plate and repeat with remaining batter.
