3 very ripe medium bananas,mashed (1 ¼ cups mashed banana)
3 eggs
¼ cup pure maple syrup
1 teaspoon vanilla extract
2 ½ cups packed fine blanched almond flour
½ cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
½ cup dark chocolate chips (dairy free if desired)
2 tablespoons extra chocolate chips for sprinkling on top
Instructions
Step 1
Preheat oven to 350°F. Line a bread loaf pan with parchment paper.
Spray pan with non-stick cooking spray.
Step 2
Whisk together the mashed bananas,
eggs,
maple syrup, and
vanilla extract until smooth. Add in
almond flour,
cocoa,
baking soda, and
salt. Mix with a wooden spoon, folding
in chocolate chips.
Step 3
Pour and smooth combined ingredients into the loaf pan using a
spatula. Sprinkle some extra
chocolate chips on top. Bake for 50-65
minutes.
Step 4
Allow bread to cool for at least 15 minutes. Remove loaf using
parchment paper, and transfer loaf to a rack until cooled completely.
Cut into slices and enjoy!
