Jerusalem Artichoke Soup

You may be thinking what is a Jerusalem Artichoke? Well, it's not from Jerusalem and it's not an Artichoke! It’s a root vegetable that come from a variety of sunflower, native to North America (you may also know it as ‘sunchoke’). They look similar to ginger but can be cooked similarly to potatoes or parsnips.⁣

I used mine to make a delicious soup topped with shiitake mushrooms, chives, black pepper and Alpro soya cream⁣. I got my Jerusalem Artichokes from Ocado but they are also available to buy from Sainsburys and Waitrose.

Ingredients

Method

  1. Heat 2 Tbsp of butter in a deep soup pan, then sauté the onions, celery and garlic over medium heat, until soft (around 6-8 minutes).
  2. Add the jerusalem artichokes and potato. Mix the stock cube with the water, then pour into the pan and bring to a simmer. Cover the pot and allow to simmer until the veg softens (around 25 minutes).
  3. Meanwhile, heat 1 Tbsp of butter in a frying pan over medium heat and add the shiitake mushrooms, soy sauce, salt & pepper. Cook through for around 8-10 minutes, stirring occasionally. Set aside.
  4. Use a blender to purée the soup. You may need to allow the soup mixture to cool first, depending on your blender.
  5. Once blended, serve in bowls and garnish with black pepper, chives, a splash of vegan cream and mushrooms.
