You may be thinking what is a Jerusalem Artichoke? Well, it's not from Jerusalem and it's not an Artichoke! It’s a
root vegetable that come from a variety of sunflower, native to North America (you may also know it as ‘sunchoke’). They
look similar to ginger but can be cooked similarly to potatoes or parsnips.
I used mine to make a delicious soup topped with shiitake mushrooms, chives, black pepper and Alpro soya cream. I
got my Jerusalem Artichokes from
Ocado
but they are also available to buy from
Sainsburys and
Waitrose.
