What is the history of the French Macaron?

It is rumored that a pastry chef, from Basque country in France, introduced King Louis XIV to the macaron on his wedding day in 1660. But, is this the real origin?

To much surprise, the macaron cookie was actually created in Italy. In fact, the word macaron is derived from the Italian word, maccherone meaning "fine dough." This delightful cookie sailed over to France as early as 1533 by Catherine di Medici, a noblewoman from Florence who married the future King of France, Henri II. Back then, the first macarons were very simple cookies made of only sugar, almond flour, and egg whites.

They have certainly evolved over time!

What's the difference between a macaron and macaroon?

We must not confuse the macaron with a macaroon! A macaroon is a sweet chewy clump of shredded coconut with a crispy, golden shell. Now, the macaron has two delicate almond and meringue halves that are sandwiched around a flavorful filling: raspberry jam, lemon curd, vanilla buttercream, – or even a chocolate ganache!
