Kitfo is a traditional dish found in Ethiopian cuisine and is the ultimate
celebration food of Ethiopia. Raw meat is considered a delicacy so it is
commonly served only on special occasions such as a wedding or religious
holidays.
Kitfo consists of minced raw beef that is marinated in mitmita (a chili
powder-based spice blend) and niter kibbeh (Ethiopian spiced butter). The
beef used for this dish needs to be top quality, extra lean red meat with
all the fat residue out since it will be hand-mixed with the spiced butter
with seasonings such as thyme, basil, turmeric, and coriander. After the
main part of the dish is prepared, Kitfo is commonly served with Ayeb
(Ethiopian cottage cheese), Gomen (Collard greens), and spongy Injera
(Ethiopian flatbread).
