ostrich, or even chicken. The name "biltong" originates from the Dutch
words bil (meaning "rump") and tong (meaning "strip"), reflecting its
shape and the cut of meat often used. Biltong is cured with vinegar and
seasoned with salt, coriander seeds, pepper, and other spices, creating a
distinctive, savory flavor.
The meat is cut into strips, soaked in vinegar for tenderness and
