Traditional Indian dessert, Sooji Halwa goes by various names depending
on the country/ place but is essentially a pudding made from semolina
(sooji), Ghee and sugar. It is mostly served on specials occasions such
weddings.
Serves- 4-6 people Prep time-5-8 minutes Time-15- 20 minutes
Ingredients
1 cup Semolina
1/4 cup unsweetened shredded/ desicated coconut (optional)
1 cup water
1/2 cup sugar
1/2 cup butter
1/2 cup milk
2-4 small cinnamon sticks (whole pieces)
2-4 drops of yellow food colouring (optional)
coloured almonds slivers for decoration
Nestle cream to serve
Method
In a pan on medium heat lightly toast semolina and coconut (if using).
Mix often making sure not to over brown. then set aside.
Bring water to boil add sugar, butter, milk and cinnamon sticks. Add
optional yellow food colouring.
Reduce heat to low and add the toasted semolina to the liquid mixture.
Mix quickly to ensure a smooth well mixed consistency. Should be mixed
constantly for 5-8 minutes.
Once thickened and mixture pulls away from the pot, switch off the
stove.
Serve warm with Nestle cream and decorate with coloured almonds
slivers on top.
