This quick recipe for
mie noodles with peanut sauce and vegetables can be
prepared in just 5 minutes and is completely cooked in the oven. It's
so easy to prepare this fresh, vegan and healthy lunch/dinner.
Ingredients for 2 portions (690kcal per portion):
125g Mie noodles
3 carrots
1 small broccoli
1 red pepper
300ml vegetable stock
250ml creamy coconut milk
60g peanut butter or peanut butter
1tbsp tomato paste
1tbsp curry paste yellow or red
1-2tsp salt
Preparation
Peel the carrots and cut into thin sticks. Remove the stalk from the
broccoli and divide the broccoli into small florets. Remove the core
from the pepper and cut the pepper into small cubes. Preheat the oven to
200 degrees top/bottom heat.
Cooking
Mix the vegetable stock with the coconut milk, curry paste, tomato
puree, peanut butter and salt. Place the Mie noodles in the centre of a
medium-sized baking dish. Spread the vegetables around the noodles. Then
pour the sauce over the mie noodles and vegetables.
Baking
Bake in the oven for approx. 20-30 minutes on the middle shelf until the
mie noodles and vegetables are cooked. Stir the kie noodles halfway
through cooking. After the baking time, remove from the oven and mix
everything well with two forks.
