Japanese knives are made of a harder steel. Because of this their lemmet can be made thinner than European knives and be sharpened in a smaller angle (15° vs. 20°). Because the tip of the knife is lower, down-forward motions are better suited for this knife. This knife can be used for meat, vegetables and fish.
