In times of Covid-19 you have to be creative and open to try new things. Staying connected with our beloved ones has come to a new level.
For myself, I found that cooking together virtually is a good way to keep in touch.
That's how the idea of Manu's virtual cooking workshop was born.
In a virtual setting we meet together to cook a typical South Tyrolean dish. You will recieve a list of
ingredients and further instructions upfront.

Take a bowl and fill it with the dry bread cubes, pour the milk and the raw eggs over and mix it with your hands or a wooden spoon.
Roast leek and onions in a pan with a bit of cornoil until onions and leek turn glassy. Mix them into the dough.
Add cheese, chive, salt and a hand full of flour to the dough and mix it.
Put a pot with water on the stove and wait for the water to boil.
In the meantime you can prepare the actual dumplings. Take a hand full of the dough and form dumplings. Press your hands together and form a round ball. Continue to do so until you used all the dough you prepared. You should be able to form 6-7 dumplings.
Put the dumplings into the boiling water that you should not forget to salt. Let the dumplings cook for approx. 7 minutes. Prepare a pan in which you melt some butter.
Take the dumplings out of the water and serve them with butter, chive and parmesan.
