Ingredients:
375 gr spelt flour
225 ml warm water
1 teaspoon honey (or sugar)
12 gr fresh yeast
1 teaspoon salt
Instructions:
Dissolve the yeast together with the honey (or sugar) in 50
ml of water taken from the total.
In a big bowl add the flour, make a well in the middle and pour the
dissolved yeast and the remaining water. Use a wooden spoon to mix
these ingredients until combined.
Add the salt and start working the dough with your hands. The dough
at this point may be a little sticky, if that is the case add 20-30
gr of flour.
Lightly dust a flat surface with flour and turn the dough onto it.
Keep working the dough energically until it reaches an elastic and
smooth consistency.
With the heels of your hands, push the dough away from you. Then
turn it 90 degrees and fold the dough in half toward you and start
again with pushing it outward. Continue this kneading process for
3-5 minutes until the dough has a silky, smooth texture.
Once the kneading process is finished, place the dough in a large
bowl where you poured some olive oil. Put the dough in the bowl and
cover is with a wet towel. Let it grow until it has doubled in size.
It should take 3-4 hours.
Once the dough has risen, separate it into balls and flour your
working surface. With your rolling pin, roll each ball from the
middle out in all directions until you have your desired thickness.
You may need to sprinkle additional flour on top of the dough during
this process.
Spoon on the tomato sauce, sprinkle with mozzarella, and place your
desired toppings on the pizza.
Preheat your oven to 250C-280C. If you have the fan option, place
the baking tray (or pizza stone) on the middle rack, otherwise,
place the baking tray on the lowest rack. Bake the pizza for 10-15
minutes until the crust is browned and the mozzarella is bubbling.
