This is my favorite desert ever, also a true french classic. 🇫🇷
This caramelized upside-down baked apple pie was notouriously invented by
the sisters Tatin. The most commonly story relates that the Tarte Tatin
was invented by mistake in the 1880's and served anyway to the guests in
their restaurant in Loir-et-Cher (100km south of Paris). It becames
quickly the signature dish of Hotel Tatin. Almost 150 years later, the
I love to bake and this is one of my go-to for a fancy desert with limited
time. This is my very personal and not so precise recipe.
Ingredients
Apples 🍎
Sugar 💮
Butter 🧈
Flour and more butter if you want to make the crust yourself 🥧
Optionally you can buy a ready-rolled puff pastry
Steps
Make the crust with 100g butter and 200g flour, mix gently with hands
and add some water, start with 2 table spoons and add one spoon at a
time until you have a nice ball.
Peel and cut the apples in big slices, usually 6 big apples. You need to
fill the pie dish.
Make some caramel with sugar and butter in a pan.
Use the time until it browns to roll out the dough.
When the caramel starts to be brown, add the apple slices and mix them
into the caramel for a few minutes.
Dispose the apples in the dish and add the rest of the caramel on top.
Top the apples with the dough, carefull it's hot, and tuck the edges in.
Bake at 180° for approx. 30min.
Wait for maximum 5minutes and carefully invert the tart into a larger
plate. Do it in top of the sink and be careful of the hot caramel.
Serve warm. You can serve with whiped cream or vanilla ice cream. 🍨
