waakye

Waakye originates from the Northern region of Ghana , deriving its name from the Hausa phrase "rice and beans" .Traditionally, it consisted of white rice cooked with black-eyed peas and baking soda, resulting in a brownish hue. However, an innovation introduced sorghum leaves into the recipe, transforming Waakye into a vibrant burgundy rice and beans dish.

Typically wrapped in plantain leaves, Waakye is enjoyed with an array of condiments, including tomato stew, shitɔ, coleslaw/salad, egg (a staple in Ghanaian cuisine), spaghetti (referred to as talia), gari (cassava couscous), kelewele, and either cow skin or fried fish.
