The History of Vegetarianism in Japan
While all sorts of meat are a huge part of the modern Japanese diet, it
was once not as widely eaten as it is today. Shojin ryōri is
the Japanese name for Buddhist cuisine, and while the rules and their
application vary from sect to sect, shojin ryōri is vegetarian
food and can be enjoyed by the public at some temples and restaurants.
It exists all over Asia, and comes from the belief in abstaining from
violence, including killing animals.
