Sushi (Japanese: 鮨 / 鮓 / 寿司, すし, MFA: [su̥ɕi]) is
a traditional dish of
Japanese cuisine
made on the basis of rice, treated with rice vinegar or salt, and
various fillings or layers, among which seafood products predominate,
but can include meat, vegetables, algae, mushrooms or eggs. Sushi can be
raw, cooked or marinated. In Korea, under the influence of Japan, a
similar national dish - kimbap - appeared, but the difference from the
Japanese dish is that Koreans do not add fish to it. In Japan, the word
sushi refers to a wide range of dishes, but in the West it is mistakenly
understood as just a lump of rice covered with a piece of raw fish.
