The Betanzos tortilla has only 4 ingredients: egg, Galician potato, virgin olive oil and salt. It sounds easy, but it is not so easy: they only use Galician potatoes, ideally of the kennebec variety. This type of potato is grown in many other places, but if someone wants to live the full betancero experience, there are several places to buy it online. The eggs are free-range, from local producers, from hens that run around as they please and eat cereals as well as feed.
