My Favorite Shortbread

Shortbread Cookies

Bake time 20-25 min | 325˚ oven

Combine flour and sugar in a bowl with a fork or a wisk. Cut butter into small squares and distrubute into dry ingredients. Incorporate butter into dry ingredients using a pastry blender until crumbly. Knead dough by hand until you can form a soft ball. Place cookie dough on an ungreased cookie sheet and flatten with the palm of your hand. Finish by dusting dough with sugar or flour and rolling it into an even 1/4 inch thick slab. Cut dough into wedges or strips with a knife and separate sections by 1/4 inch or so. The cookies don't expand much during the cooking process, so just enough room to cook evenly is fine.
