Ginger and Lime Chicken

Ingredients

  1. 1 tbsp rapeseed oil
  2. 5 (about 1.1kg) chicken legs, skin on
  3. 50g spring onions, thinly sliced
  4. 4 garlic cloves, crushed
  5. 2 tbsp peeled and finely grated ginger
  6. 350g white rice, rinsed
  7. 750ml gluten-free chicken stock
  8. juice of ½ lime, plus wedges to serve
  9. 1 x 400ml can coconut milk
  10. 00g Tenderstem broccoli, florets sliced and stems thinly sliced 1
  11. salt and pepper to taste
  12. handful of fresh coriander, torn, to garnish
