Quinoa-Salad with Avocado & Mango

Preparation
  1. Rinse the quinoa and cook it according to the instructions on the package. Meanwhile, cut the mango into small cubes, peel and halve the onion, then cut it into fine strips.

  2. Wash the lettuce and tear it into smaller pieces if necessary. Wash the cucumbers and cut them into thin slices. Clean the chili, cut it lengthwise and remove the seeds.

  3. Cut the chili into small pieces. Then wash the parsley and mint and pluck off the leaves. Roughly chop the herbs, leaving a few leaves for garnish.

  4. Halve the orange and lemon, and squeeze out the juice. Keep one 1 tbsp from the juice for later, the rest mix with the honey, chili and onion. Season generously with salt, pepper and oil. When the quinoa is done, put it in a colander and let it cool down under cold water.

  5. Halve the avocado. Remove the core and skin, then cut it into wedges. Drizzle with 1 tbsp left from the lemon/orange juice.

  6. Mix the vinaigrette with the cucumber, mango, lettuce, chopped herbs and quinoa, and season them with salt and pepper if necessary. Gently fold in the avocado. Put the salad in a big bowl, garnish it with the remaining herbs and sprinkle with pepper.
