Sprinkle Cake - Lockdown's Antihero? πŸ‘©πŸΏβ€πŸ³


As London first went into Lockdown earlier on this year, UK supermarkets experienced product shortages. Alongside toilet roll another victim became flour as home baking became a popular way to spend time indoors. Flour one of the key ingredients for the classic tray bake which was trending on social media. However the retro pudding was also surrounded by the controversy of the alleged marked up prices these homemade cakes were being sold for. Fortunately you can have your very own affordable Sprinkle cake without breaking the bank. See below on how to create your own version of the classic dessert and rate the recipe a thumbs up or down for alternatives!

Ready Steady Cook!

You will need:


Pre-heat oven to 200ΒΊC or 180ΒΊC in fan oven.
Mix the butter and sugar together until you get a light and fluffy texture.
whisk the eggs, vanilla extract and milk together well. Then add to butter and sugar mixture.
Add the Self Raising Flour and pince of salt mixture above gradually until well combined. note: be careful not to over mix.
Line your tray bake tin with butter, sprinkling flour around the tin. Tip: tap tin to distribute four evenly.
Add the cake dough into the tray, spread the mixture evenly with a spatula.
Place tray bake tin into oven for 20 minutes
Note: While cake is baking/ being left to cool down
Whisk egg whites until soft peaks emerge.
Add icing sugar (sieved) and mix well after each addition.
Note: icing should have a thick consistency.
Spread Icing on top of cake creating a generous layer of icing.
Add sprinkles on top of icing to cover the entire top layer.
Finally slice cake into preferred portions.
