Pap is a type of porridge that is commonly made from maize meal or other
grains. In most if not all african countries, pap is a staple food and
is often served with stews and or other dishes. Ice cream storyteller
Tapiwa Guzha describes himself as a child of the continent. Guzha's
voyage into ice cream making was inspired by an episode of the popular
cooking show MasterChef. Guzha develops all his ice creams around
African-centred flavours and uses these as a starting point for stories
and insights into the diversity of African cultures. Tapiwa Guzha's
calls his eatery "Tapi Tapi" which is a Bantu ideophone that means
“sweet sweet.” While Tapi Tapi originally served as an ice cream-centric
space, it expanded its wide variety of continental flavours into
cocktails, baked goods, bread, fermented milk, soda, and other sweets
and treats.
