Bengali-style biryani is often overlooked when compared to popular Indian-style counterparts. Ingredients such as Gondhobhog aromatic rice, use of potatoes and the preparation set it apart. It is often difficult to find Bengali-style biryani outside of Bangladesh and West Bengal and different regions have their own special variations. Kachhi Biryani is a prime example of the balanced and rounded flavors that comes from the layered preparation. The juicy mutton, indescribable potatoes along with the aromatic rice comes together as a complex dish. Flavors are milder, has the potato to bring about a nice contrast (not having it in a Bengali biryani is a crime), and the meat itself is very tender and retains its original flavor without an excessive intervention of spices.
