Nanaimo bars, a Canadian national treasure, originated in the city of
Nanaimo in British Columbia.
It consists of three delicious layers: a buttery crunchy base, a sweet
vanilla custard buttercream filling and a smooth chocolate ganache
topping.
While the three layers are what makes a Nanaimo bar, it's fun to get
creative and experiment with different flavours!
Ingredients:
For the Base:
145g Butter
60g Caster Sugar
40g Cocoa Powder
¾ tsp sea salt
1 Large Egg
225g Crushed Hobnobs
105g Desiccated Coconut (OPTIONAL: Substitute or replace with same
quantity hobnobs or alternative ingredient. I used 105g crushed Golden
Graham cereal instead of coconut!)
80g Walnuts (OPTIONAL: Substitute or replace with same quantity
hobnobs or alternative ingredient. Hobnobs have a great oaty texture
which I used in my nut-free version)
Custard Buttercream:
Icing Sugar (I used extra-fine coconut sugar blended in a cpoffee
grinder for a more intense caramel taste - this sugar alternative has
lower GI)
4 tbsp Custard Powder
5 tbsp Double Cream
Topping:
200g Dark Chocolate - I used 55% semi-sweet chocolate chips
