Food is life. Literally. Biodiversity would not exist without it. People, plants, animals, insects, etc......you get the drift. But food means more than a necessity to me. I have taken many paths in my life and one in particular lead me to some very undesireable destinations. Unsure I would ever leave that destination; I slowly found my way on a better path, and it led me to a kitchen. Well, actually the dish pit of a kitchen but it was attached to a kitchen. 😂 I got to know the dish pit very well but started to learn about the food that was being prepared, eaten and then embraced on the dishes that I later washed. The farm to table environment and learning about how and where and who grew the food was fascinating! Then I started to learn how to prepare the beautiful and nurtured food that I had learned so much about. I was hooked. Learning to cook appetizers turned in to salads and entrées and desserts. I learned how to make fresh pasta. Butcher and braise meats. Master sauces and emultions. And so much more. I just kept showing up. That kitchen path lead me to another kitchen where I learned more things and another and another. Before I knew it I went from a part time dishwasher to a Chef de Cuisine and I never looked back to those undesirable destinations. Not for any other reason but for reflection. I had no idea that the day I walked in the kitchen that I would learn so much about food and how it would save me..
