The humble brownie has long been a favourite pudding or dessert in many households. It is believed to have originated in the United States in the 19th century and has since spread to all corners of the globe. It frequently features on restaurant dessert menus the world over and unsurprisingly there are many recipes claiming to make the most delicious brownies ever. But what is the secret to making a really good brownie?

The key is to use good quality dark chocolate, ideally a chocolate with at least 70% cocoa solids. Caster sugar usually gives a better finish than granulated sugar and you must not overcook the brownie, otherwise it will become dry and unpleasant. In order to bake soft, gooey brownies, it's good practice to bake them for no more than 20 minutes and regularly check them by inserting a knife into the mixture. If the knife comes out clean, you know they're ready, if not a little overcooked! If the knife comes out with a little bit of mixture on it, then that's a sign that the brownies are almost done. Simply turn off the oven and leave the brownies to cool down - they'll start to form as they cool down.
