The dessert was born in San SebastiƔn in the Basque region of Northern
Spain. Recently, it has been making waves across Spain. In the 1990s,
Basque cheesecake was first created by chef Santiago Rivera and served
at La ViƱa bar in San Sebastian's old town. It was called tarta de
queso, meaning cheese pie.
Nobody could imagine that in 2013 three chefs of Chicago restaurants,
Grant Achatz, Mike Bagale, and David Beran, would fly to Spain for
culinary inspiration.
